California Trip 2006

Day 13

Sunday, October 8, 2006

More sunshine and 53 degrees to start the day. If all goes according to plan it will be another day of just relaxing before we hit the road tomorrow morning.

Del decided to fire up "Big Bubba", his giant 1,700 pound smoke cooker, and cook some beef brisket's and baby back ribs.

It's an all day process that he started around 10:00AM and everything should be ready by around 6:30.

Brisket
Now that's a piece of meat!

First he dresses out the meat and adds Billy Bones rub to the meat. Then loads a wheelbarrow full of oak into Big Bubba starts the fire.

Bubba gets fired up
The wood goes in a firebox below the cooking chamber

Once the cooker reaches about 300 degrees F., which take about an hour, he loads on the meat and the smoking/cooking begins.

There's the Beef
There's the Beef!

He has a computer that monitors the fire to keep it at a constant temperature by turning a small blower off and on. Now there's nothing to do but sit back and relax and add a little wood to the fire every now an then.

Relaxing
It's a tough job but somebody has to do it!

About two hours before dinner he started firing up the wood fired pizza oven.

Pizza Fire
Del fires up the Pizza Oven while Diane looks on.

He loads the oven with wood and starts the fire. In about an hour and an half and a whole bunch of fiddling with the fire the oven is at 800 degrees F and ready to cook pizzas. It only takes about 75 seconds to cook a pizza once everything is to temperature.

Each person made their own little pizzas and Del cooked them.

Pizza Time
Del fishes out a cooked pizza

Everything was absolutely wonderful and cooked to perfection. We had a grand time and probably ate more then we should have. What we'd call a perfect day.

Time to relax
Time to relax, a perfect end to a perfect day.
