CHOCOLATE COVERED CHERRIES

      Here is something for your sweet tooth! The dentists may not like this recipe but we're sure you will. Even though George didn't really chop down a cherry tree we thought this would be appropriate for Presidents Day also.

  • 3 Tablespoons Butter
  • 3 Tablespoon Corn Syrup
  • 1/2 teaspoon Vanilla
  • 1/4 teaspoon Salt
  • 2 1/2 Cups Powdered Sugar, sifted
  • 2 10 ounce jars Maraschino Cherries with stems
  • 12 ounce package Milk Chocolate Chips
  • 3 Tablespoons Shortening

Combine Butter, Corn Syrup, Vanilla and Salt
Add Sugar and beat well. If too thick, knead.
Divide fondant in half.
Roll into two 7" logs.
Wrap in plastic wrap and refrigerate for 1 - 1 1/2 hours.
Cut the logs into 1" pieces and cut each piece into four quarters.
Place into your palm and flatten each piece.
Wrap around a Cherry to cover.
Place on a piece of waxed paper, cover and freeze 30 minutes.
Melt the Chocolate Chips and Shortening together.
Dip the Cherries in the Chocolate, shake off the excess.
Place on waxed paper and chill for 20 minutes.
Store in the refrigerator.

Now post a guard outside the refrigerator because these will go really fast.
