TOAD IN THE HOLE

There are a lot of different versions of this recipe but we think ours is the best.
  • 1 Cup Flour
  • 1/4 teaspoon Salt
  • 1 Cup Milk, room temperature
  • 2 Eggs, room temperature
  • 1 Lb. Link Sausages
  • 1 1/2 teaspoon Hot Mustard
  • 1 Tablespoon Red Jelly
  • 1/4 Cup Sherry
Place Flour and Salt in a bowl and stir in Milk.
Beat Eggs and beat into batter and let stand for 30 minutes.
Fry Sausages until browned. Drain fat into a 9" X 12" pan.
Add Mustard, Jelly, Sherry and let boil until the links are will coated and the liquid is a glaze.
Put the Links on the bottom of the pan with the grease.
Put the pan in a hot oven until very hot. Remove and pour the batter over the Links and put back in the oven.
Bake at 400 degrees F. for 20 minutes. Reduce to 350 degrees  for an additional 10 - 15 minutes or until brown.
Serve immediately.

Serves 4.
