PITA BREAD

  • 1 Package Dry Yeast
  • 2 Tablespoons Honey
  • 2 1/2 Cups Warm Water
  • 6 to 7 Cups Unsifted Flour
  • 4 teaspoons Salt

In a small bowl, dissolve the Yeast in 1/2 Cup of Warm Water and Honey.
Let stand 18 minutes
While that is standing combine 3 Cups Flour and Salt in a large bowl.
Add Yeast/Honey mix and 2 Cups Warm Water. Beat with a mixer for 2 minutes.
Stir in 3 Cups Flour and knead for 8 to 10 minutes.
Let rise until double, approximately 1 hour.
Punch down and divide into 12 equal pieces on a floured board.
Cover with plastic and let rest for 10 minutes.
With a rolling pin, roll each piece into a 6" circle 1/8" thick.
Arrange on an ungreased baking sheet and bake at 450 degrees F for 10 minutes.
